4-Ingredient Pumpkin Tofu Mousse
This pumpkin tofu mousse is what I'm reaching for when I'm craving pumpkin pie but want more protein! It's silky smooth, with a sweet and satisfying crackable brûléed top. It's essentially a high protein pumpkin pie (minus the crust), which makes for a guilt-free treat!

- 16 oz silken tofu
- ¾ cup pumpkin puree
- 1 ½ teaspoon pumpkin pie spice
- 4 tablespoon brown sugar plus more for topping
- ½ teaspoon cinnamon optional
In a blender, blend together silken tofu, pumpkin puree, brown sugar, pumpkin pie spice, and optional cinnamon. Pour mixture into a ramekin and refrigerate for at least 2 hours or until set.
When ready to serve, top with brown sugar and torch until caramelized and brûléed.
- Store covered in the fridge for up to 4 days.
- Add brown sugar on top only if enjoying immediately.
