Bacon Onion Jam

- Bacon: For more of a bite and chew, I use thick cut.

Burger
- Ground beef: 80/20 or 90/10 work great!
- Salt and pepper: The burger patty is simple here, so season well with salt and pepper for the best flavor!
- Cheese: Gruyère or Swiss pairs well and melts beautifully.
To assemble
- Burger buns: Brioche or potato buns are my favorite here!
- Arugula: For a peppery bite.
- Burger sauce: Use your favorite homemade or store bought burger sauce!

How to Make Bacon Onion Jam Burgers
To make the bacon onion jam:
- In a large pan over medium-low, add bacon. Sauté until the bacon fat renders down. Add onions and sauté until slightly caramelized. Stir in garlic cloves and cook until fragrant and softened.
- Stir in maple syrup, brown sugar, and black pepperm to taste. Bring to a gentle boil until jam begins thickening. Remove from heat and set aside. The jam will thicken slightly more as it cools.
To make the burger patties:
- Divide the ground beef into 4 equal portions and gently form them into ¾ inch thick patties. Season both sides with salt and pepper.
- Heat a cast iron skillet or grill to medium-high. Cook the patties on one side for 3-4 minutes without moving them, to create a nice crust. Flip and cook another 3-4 minutes or until preferred doneness.
- In the last minute of cooking, place a slice of Gruyère cheese on each patty and cover with a lid until melted. Remove from heat.
To assemble:
- To a toasted bun, add some burger sauce, followed by a burger patty, bacon onion jam, and arugula. Top with more burger sauce as desired and enjoy warm!
