It's pumpkin pie filling but with more protein! This pumpkin tofu mousse is what I'm reaching for when I'm craving pumpkin pie but want more protein! It's silky smooth, with a sweet and satisfying crackable brûléed top. It's essentially a high protein pumpkin pie (minus the crust), which makes for a guilt-free treat!

The 4 ingredients you need for this easy pumpkin mousse

  • Silken tofu
  • Pumpkin puree
  • Brown sugar
  • Pumpkin pie spice
  • Cinnamon, optional

How to make the easiest pumpkin tofu mousse

  1. In a blender, blend together silken tofu, pumpkin puree, brown sugar, pumpkin pie spice and optional cinnamon. Pour mixture into a ramekin and refrigerate for at least 2 hours or until set.
  2. When ready to serve, top with brown sugar and torch until caramelized and brûléed.

FAQ

Can I use regular firm tofu?

Unfortunately no, regular tofu is too firm and won't create that smooth, creamy texture you need. Silken tofu is essential for this recipe.

What if I don't have a torch?

A torch will give the best results but you can also use your oven's broiler setting instead. Place ramekins on a baking sheet and broil for 1-2 minutes, watching carefully to prevent burning.

Can I make this ahead of time?

The filling can be made ahead of time and rest in the fridge for up to 4 days.

  • 16 oz silken tofu
  • ¾ cup pumpkin puree
  • 1 ½ teaspoon pumpkin pie spice
  • 4 tablespoon brown sugar plus more for topping
  • ½ teaspoon cinnamon optional

Instructions

  • In a blender, blend together silken tofu, pumpkin puree, brown sugar, pumpkin pie spice, and optional cinnamon. Pour mixture into a ramekin and refrigerate for at least 2 hours or until set.
