It's silky smooth, with a sweet and satisfying crackable brûléed top. It's essentially a high protein pumpkin pie (minus the crust), which makes for a guilt-free treat!

How to make the easiest pumpkin tofu mousse
- In a blender, blend together silken tofu, pumpkin puree, brown sugar, pumpkin pie spice and optional cinnamon. Pour mixture into a ramekin and refrigerate for at least 2 hours or until set.
- When ready to serve, top with brown sugar and torch until caramelized and brûléed.

Unfortunately no, regular tofu is too firm and won't create that smooth, creamy texture you need. Silken tofu is essential for this recipe.
A torch will give the best results but you can also use your oven's broiler setting instead. Place ramekins on a baking sheet and broil for 1-2 minutes, watching carefully to prevent burning.
The filling can be made ahead of time and rest in the fridge for up to 4 days.
