Don't knock it 'til you try it! Avocado Chia Pudding is a take on the classic Vietnamese (Sinh Tố Bơ) and Filipino (abukado lamaw) avocado dessert, with condensed milk and crushed ice. It's a refreshing and nutrient-packed treat you can enjoy for breakfast or dessert! It's loaded with healthy fats and fiber and feels indulgent without sacrificing nutrition.

This avocado chia pudding recipe was inspired by a Vietnamese dessert I always ate growing up— avocado and condensed milk with crushed ice! It's similar to the avocado smoothie, or Sinh Tố Bơ in Vietnamese, but chunkier with more bite. The avocado seeds mimic sago or tiny tapioca pearls I would eat in Vietnamese desserts growing up, which gives it a nice chew. It is a sweet and super delicious way to enjoy avocados. Just like my mango chia pudding, this avocado chia pudding has the addition of chia seeds to help thicken the pudding naturally.
With just a few simple ingredients and 10 minutes, you can whip up this luscious, refreshing avocado chia seed pudding that’s as delicious as it is nutritious.

Ingredients
- Chia Seeds: These little seeds pack a punch with fiber, protein, and omega-3s. They also create a lovely pudding-like texture when soaked in liquid!
- Milk: Almond, coconut, or oat milk all work well here. Choose your favorite or what you have on hand for a creamy base. Regular milk also works!
- Avocado: Avocado lends a rich, creamy texture along with healthy fats.
- Condensed Milk: To perfectly sweeten the avocado chia pudding! You can add more or less to suit your taste.

How to Make Avocado Chia Pudding

Step 1: Mix together your chia seeds and milk. Let sit for 10 minutes or until chia seeds have absorbed the milk. Stir occasionally.

Step 2: Add in your diced avocado.

Step 3: Combined with crushed ice and condensed milk.

Step 4: Stir, serve and enjoy!
Hint: Add some crushed ice to make it nice and cold! It is super delicious this way, just like I used to eat it when I was a kid.

- Milk Options: You can swap non-dairy milk for regular milk if you prefer, or even use full fat coconut milk for extra creaminess.
- Sweeteners: If you want to cut back on sugar, you can substitute the condensed milk with maple syrup, honey, or a sugar-free sweetener like stevia.
- Add-ins: For extra flavor, try adding vanilla extract, a pinch of cinnamon, or even some cocoa powder to make chocolate avocado chia pudding!

Top Tips
- Stir the chia seeds well with milk! Stir the chia seeds into the milk right away to prevent clumping. Let it sit for about 10 minutes, stirring occasionally until the seeds have absorbed the milk.
- Use a ripe avocado for the creamiest texture. If you want an extra smooth pudding, blend the avocado and chia mixture together.
- Chill for later if desired! For an extra thick pudding, you can let the chia seeds and milk sit in the fridge for a few hours before stirring in the rest of the ingredients.
Storage
I prefer to eat this easy avocado pudding on the same day that I make it! However, if you need to store it, you can store it in an airtight container (like a jar) in the fridge for up to 2 days. Give it a good stir and enjoy!
FAQ
Traditionally, condensed milk is used to lend the sweetness and creaminess to the avocados. However, you can use dairy-free condensed milk! I wouldn't recommend other sweeteners like maple syrup, honey, agave nectar, or a sugar-free sweetener since the taste will vary too much, but if you try these sweeteners, let me know how it is!
The chia seeds will thicken the pudding in about 10 minutes, but for an even better texture, you can allow it to chill for 30 minutes to a few hours before stirring in the avocados!
