Avocados belong in dessert-- don't knock it 'til you try it! This creamy avocado chia pudding is a take on the classic Vietnamese (Sinh Tố Bơ) and Filipino (abukado lamaw) avocado dessert, with condensed milk and crushed ice. It's a refreshing and nutrient-packed treat you can enjoy for breakfast or dessert! It's loaded with healthy fats and fiber and feels indulgent without sacrificing nutrition.

This avocado chia pudding recipe was inspired by a Vietnamese dessert I always ate growing up— avocado and condensed milk with crushed ice! It's similar to the Vietnamese avocado smoothie, Sinh Tố Bơ, but chunkier and with more bite, fiber and protein. The avocado seeds mimic sago or tiny tapioca pearls I would eat in Vietnamese desserts growing up, which gives it a nice chew. It's a sweet and super delicious way to enjoy avocados!

Ingredients

  • Chia Seeds: The main ingredient in chia pudding! Packs a punch with fiber, protein, and omega-3s.
  • Milk: Almond, coconut, or oat milk all work well here. Choose your favorite or what you have on hand for a creamy base. I love using a high protein milk like Fairlife fat free milk for added protein!
  • Avocado: Adds the creamy texture along with healthy fats.
  • Condensed Milk: To perfectly sweeten the avocado chia pudding! You can add more or less to suit your taste.
  • Collagen powder: This is optional but is a great way to sneak in some more protein. Be sure to mix this well!

How to Make Avocado Chia Pudding

Step 1: In a bowl, mix together chia seeds, milk, Greek yogurt, condensed milk, and collagen powder. Whisk until well combined.

Step 2: Let chia seeds sit for a few minutes before adding in 1 of the diced avocados. Give it a light mash and whisk to combine.

Step 3: Add in the remaining diced avocado and give it a gentle stir with the spoon, being careful not to mash the diced avocado further. Let sit in the fridge for 30 minutes or until the chia seeds have absorbed all of the milk and have expanded.

Variations & Substitutions

  • Dairy free: Use light coconut milk or a plant based milk, along with sweetened condensed coconut milk for a dairy free chia pudding!
  • Add-ins: For extra flavor, try adding some cocoa powder or melted chocolate to make chocolate avocado chia pudding!

Top Tips

  • Stir the chia seeds well with milk! Stir the chia seeds into the milk right away to prevent clumping. Let it sit for about 10 minutes, stirring occasionally until the seeds have absorbed the milk.
  • Use a ripe avocado for the creamiest texture. If you want an extra smooth pudding, blend the avocado and chia mixture together.
  • Best chilled! Refrigerate the avocado chia pudding until you're ready to eat.

Storage

I prefer to eat this easy avocado pudding on the same day that I make it! However, if you need to store it, you can store it in an airtight container (like a jar) in the fridge for up to 2 days. The longer it sits, the more the avocado will oxidize at the top. Similar to guacamole, it will start to brown a little, so just be sure to remove that top layer before enjoying!

FAQ

Can I use another sweetener besides condensed milk?

Traditionally, condensed milk is used to lend the sweetness and creaminess to the avocados. However, you can use dairy-free condensed milk! I wouldn't recommend other sweeteners like maple syrup, honey, agave nectar, or a sugar-free sweetener since the taste will vary too much, but if you try these sweeteners, let me know how it is!

How long does chia pudding need to sit before it's ready?

The chia seeds will thicken the pudding in about 10 minutes, but for an even better texture, you can allow it to chill for 30 minutes to a few hours!

Why is my avocado chia pudding brown?

Avocados oxidize when they are exposed to air, just like guacamole that has been sitting in your fridge. The browning on top is due to the avocado oxidizing but no need to worry, you can remove the top layer and enjoy it as is!

Can I make this ahead of time?

This is best consumed the day you can make it! The best way to make this ahead of time is to make the chia pudding without adding any avocados. When it's time to eat, cut open your avocados and add it in so it's fresh and not oxidized!

Notes

Use whatever milk you have on hand! Plant-based milk like almond milk, oat milk, or even coconut milk works great here. Regular milk would also do the trick!

    As the world people know some food are great taste, but not healthy, otherwise, Avocado mix with chia are a great food and so delicious, also help cardiovascular, too. Thanks girl.
