It’s a twist on the classic piña colada cocktail that's free of alcohol and perfect for starting your day or enjoying as a healthy dessert.

Unlike their cocktail cousin, these beauties are totally breakfast-appropriate (and perfect for dessert!). This tropical chia pudding is ridiculously easy to make – all you have to do is mix everything together and let the chia seeds do their magic!

And while these taste indulgent, they're actually packed with good-for-you ingredients. Chia seeds have tons of nutrients, coconut milk contains healthy fats, and fresh pineapple adds that perfect tropical sweetness without any refined sugar.

Ingredients

  • Chia Seeds: These tiny powerhouses are the foundation of the pudding, expanding to create a thick, gel-like consistency while providing omega-3s, fiber, and protein.
  • Pineapple Juice: Adds an extra level of tart, tropical flavor.
  • Coconut Milk: Full-fat canned coconut milk creates the creamiest texture and richest flavor. Light coconut milk can be used but will result in a thinner consistency.
  • Coconut Yogurt: Adds tanginess while maintaining the coconut theme!
  • Pineapple Chunks: Freshly sliced pineapple works great, but you can also used canned pineapple if you prefer! Make sure they are cut into bite-sized pieces.
  • Coconut Whipped Cream & Coconut Flakes: Use as garnish on your pineapple coconut chia pudding, if desired!

How to Make Easy Piña Colada Chia Pudding

Step 1: In a glass, add your chia seeds, pineapple juice and coconut milk. Stir and let it sit for 10 minutes, stirring occasionally.

Mixing in pineapples and Greek yogurt into the chia pudding.

Step 2: Add coconut yogurt, pineapple chunks and mix.

Sprinkling coconut flakes onto the pina colada chia pudding before serving.

Step 3: Top with coconut whipped cream, more pineapple chunks and coconut flakes and enjoy!

Top Tips

  • To prevent the chia seeds from clumping, make sure you stir well at the beginning and then stir occasionally while the mixture is thickening.
  • If you prefer, you can let the chia pudding sit overnight. In the morning, mix in the Greek yogurt and pineapples, add the toppings, and enjoy!
  • If you want a sweeter piña colada chia pudding, you can add a little bit of honey or agave nectar! Make sure to taste it before you add any sweeteners though.
  • I recommend serving your pineapple chia pudding in clear glasses for a gorgeous presentation!

Substitutions & Variations

  • Fruits: You can swap out the pineapple juice and pineapple chunks for different fruits like apples, oranges, or berries! Or, you can try my mango chia seed pudding instead.
  • Yogurt: Use regular Greek yogurt or coconut Greek yogurt for added protein, if you don't have coconut yogurt on hand.
  • Nuts: Add chopped macadamia nuts or toasted almonds for crunch.
  • Granola: Layer with coconut granola or your favorite store-bought granola for a breakfast parfait!
  • Sweetness: Drizzle with honey or agave for additional sweetness if desired.

Storage Suggestions

The base pudding keeps well in an airtight container for 3-4 days in the refrigerator.

For best results, store the base pudding separately from toppings and add fresh fruit, coconut flakes, and whipped cream just before serving. The pudding may thicken slightly over time; thin with additional coconut milk if desired.   • ¾ cup pineapple juice I used Del Monte
  • ½ cup coconut milk I used Nature's Charm
  • ½ cup coconut yogurt
  • ½ cup pineapple chunks cut into small pieces, plus more for garnishing
